What's the difference between the words gray and grey? What makes for their proper use?

The pronunciation and meaning of the words are exactly the same. Grey is the spelling of the word in "Queen's" English, where gray is the "American" English spelling. If you're Canadian, spelling of a lot of words can be confusing, as we have adopted many American spellings of words that we use.
